Playing in the Kitchen: Tortellini & Spinach Soup

In all my life-after-football-free-time, (which I will post a mourning post about in the next few days, promise) I have gotten to do a lot of cooking & baking recently!

Tonight my adventure involved rummaging through the cabinets & googling recipe suggestions & substitutions--all of which resulted in wonderful deliciousness that I'm calling tortellini & spinach soup!

I never think to take pictures of prep & process while I'm cooking so unlike all the food blogs I thoroughly enjoy I'm just going to share the recipe I ended up using (based off the recipe from Annie's Eats) and adjusted with substitution suggestions from All Recipes Substitutions Article so you can try it!

Tortellini & Spinach Soup
Yields 4-5 servings

Ingredients:
1 Tbsp olive oil
1/8 cup dried chopped onion
1/8 tsp garlic powder
1/2 tsp dried oregano
1 can (I had a 14.5 oz can) diced tomatoes and juices
2 cups chicken broth
1 can (14 oz) vegetable broth
9 oz tortellini (any kind should work, I used whole wheat 3 cheese tortellini)
3 cups fresh spinach, chopped

Directions:
In a large sauce pan (make sure it's a couple inches deep so you have room to boil the soup mixture & add pasta)  heat the olive oil & onion on medium high for 2-3 minutes. Stir in the tomatoes, garlic and oregano. (careful the tomato juice doesn't splash all over you because the pan is hot!). Stir well and then add the broths. Bring mixture to a boil, stirring occasionally. Add the tortellini & cook by package directions. (I cooked mine uncovered for about 9 minutes.) Once the tortellini is warm and tender, turn off the burner and stir in the spinach. The spinach will only take a minute or so to become warm and soft, don't leave it on the heat too long or it could get mushy. Top with cheese if you like!

We made salads and garlic cheese toast to go with ours & it was great! (We being me, my sister & my mom.)

Diaries of a Football Student: Last Home Game

Tomorrow is Senior Day.
Tomorrow is our last home game.
Tomorrow is the game that will decide who goes to the SEC Championship for the East.

Tomorrow is the last time I will be on the sidelines with my boys between the hedges.
Tomorrow is my last game in Athens as a student.


As excited as I am to watch the Seniors run out & celebrate their time here at Georgia and as anxious as I am to have our trip to Atlanta be a sure thing...tomorrow will be bittersweet.

There is no place like Sanford Stadium, and I am so thankful for all the memories I have made there--both in the stands & on the sidelines. The Dawg Walk, the Redcoats playing our Alma Mater, the Larry Munson montage, crowd-noise practices & post-game celebrating will always hold a special place in my heart, but I think the thing I'll miss the most is the pre-game routine in the locker room...the traditions, the superstitions, the hype. The next time I walk across that field will be graduation & I'm sure I'll be excited, but coming back to the Stadium after tomorrow will never be the same.

Diaries of a Football Student: Week 10

Wow. I haven't blogged since August. Honestly, if I told you what my normal week is like, you would pass out from exhaustion after reading the to-do list. :)

Nevertheless, here is an update on my football-filled life!

I love this team so much it's not even funny. You would too if you spent 40+ hours a week watching countless drills, making so much powerade, wrapping on obscene amounts of ice bags and praying for 3rd down conversions. We have 3 regular season games left. Two more SEC games at home & then we head to Atlanta to make sure Tech still knows who runs this state. (I would say sorry if you're a Tech fan, but I'm a terrible liar.) If all goes well (fingers crossed, prayers said & lucky wristbands worn to ensure that it does!) we will head back to Atlanta for the SEC Championship game and my season will be drawn out to sometime in the beginning of January for a bowl game in a warm, sunny place!

I am not ready for this season to end, because I am not ready to say goodbye to this team. I grew up a Dawg fan. I was raised to bleed Red & Black. After the last 3 months (and hopefully another 2+) though, I will never look at football the same. 20 hours of practice and countless hours of meetings, lifts, treatment and travel every week have ruined me for ever being in the stands again. Because after knowing what it's like to stand behind the guys day in and day out, only being there on Saturday just isn't going to cut it...

To all my fellow members of Dawg Nation, you've seen history this year (first time UGA has beat UT and UF in the same season since 1988! Yesterday we hung 63 points on the board & had two boys disappear into the Hedges on TD runs! Our defense is making QBs across the Southeast tap out before halftime!) & I hope you're ready for more--this team is no where near done. Get excited! & GO DAWGS!

Diaries of a Football Student: Day #30

Day #30:

wow. I can't believe it has been almost a month since football started! & it is FINALLY GAME WEEK!!!

In just a few days we will be walking into the Dome to kick off this season! & I can't wait! I will try to blog more--school plus football doesn't leave me much time and I've been slacking here!

Hope you tune in to see the Georgia vs Boise State in the Chik-fil-A Kick Off in the Georgia Dome Saturday at 8pm!!

Diaries of a Football Student: Day #3

This morning we had our first day with the team: 6am fitness test! Yay! haha.

Things are going pretty well so far; tomorrow is our first full day (read that, probably spending 12+ hours at football!) so I'm hoping it will go well & praying for a sudden cool front! :)

Also, currently feel gross, thinking maybe it's just a little food poisoning...we will see how that mixes with the predicted 108 heat index tomorrow!

Tomorrow is the first day of school for my brother (who will be a junior!?) and for my nurse friend, Erin, and my teacher friends, Abby & Dana, along with all the other school goers & teachers! Personally, I loved the first day back, so I'm hoping everyone has a wonderful day tomorrow!

Diaries of a Football Student: Day #1

My lovely fellow bloggers! I am SO SORRY I failed to launch Sunday Seeker yesterday! I have spent the better part of the past week at my best friend's house crafting & working out with my best girlfriends or with my brother & sister trying to fit in as much visiting as possible before football pre-season began today! Yesterday I spent out on Lake Lanier with Caroline & her super awesome family (minus her [& practically my] little sister, Hannah!) having fun doing nothing in particular! 

I felt that spending face time with one of my second families was a good excuse for not blogging about all the other things I'd like, no? (As Dumbledore says, 'It does not do to dwell on dreams and forget to live.')

So! In an attempt to keep my blogging up and make it fit my soon to be very busy schedule, I'm going to try and get a tidbit of my day in each day!

Tour of Athens: my hometown is one of the best places on Earth, no doubt!
My fellow football students are super cool & I can't wait to spend the next 6 months with them! :)


Just finished my workout, now to finish some laundry & get to bed! 8am will be here early tomorrow!

breath in....& out.

I'm currently on day two of soccer camp #2 & so far, so good! I'm tired, but the girls are having a blast & I'm learning a lot about being on my own as a healthcare provider!

This upcoming week is my last week of summer as an undergraduate. Football camp starts next Monday & then classes start two weeks after that. I am two semesters away from being a college graduate. This may very well be my last entire summer at home, which makes me excited and sad. I'm so excited about my future & becoming a Certified Athletic Trainer & going to graduate school & finding a job, but at the same time, I know I'll be sad to leave home for a place where I won't know anyone. So, for right now, I'm taking it one day at a time & remembering to enjoy every second of the next year at UGA, in Athens & at home with my family. Just breathing in....& out & not thinking about all the questions and decisions that this next year of school will bring and answer.

On a lighter note, only one week until I launch my new link up: SUNDAY SEEKER! Now, I just have to figure out how to spread the word! I'm working on finishing the badge for it between soccer sessions! I'm so excited to start this & hear what it is you're aiming for each week! In fact, I'm so excited I'm going to go ahead and do a sample Sunday Seeker in this post! (love some alliteration!)
The badge is not quite finished, but it's a start!


*After soccer camp ends Tuesday, I hope to spend the rest of the week hanging out with family & friends before football camp starts August 1st.
*I want to get my blog link up all set for it's launch!
*I want to make some crafty things with my best friends! (so many ideas from Pinterest!)
*I want to find a reason to wear my super cute new romper that I got at Community downtown!
*I want to bake to my heart's content. I haven't cooked in so long & I'm dying to spend a few hours in the kitchen fixing something for someone!
*I want to get back into my workout routine--I've been slacking lately--unacceptable.
*I want a tattoo!! (of my favorite verse. on my right scapula.)
*I want to lay in the sunshine & feel that sweet, sticky warmness all over my skin until it lulls me to sleep.
*I want to finish the book I've been reading all year & start a new one.
